Quick Meal Ideas When You're Working From Home


If you are working from home you might be looking for quick meal ideas. It is not a secret that cooking at home requires effort but knowing what you need to do before mealtime is key. You can start by making a list of the ingredients you need and if you are new to cooking at home, you can start by doing just a couple of meals until you get more experienced.

Here are some easy and quick vegetarian meals you can do at home. 


1. Chilli Tofu Ramen


  • 25 grams of dried shiitake mushrooms
  • Sake
  • Mirin
  • Soy sauce
  • 1 clove garlic, bashed
  • Chopped ginger 
  • 2 red chillies, 1 sliced in half, 1 finely sliced
  • 150 grams of winter greens (pak choy, kale or spinach) shredded
  • 2 handful of bean sprouts
  • 300 grams of egg-free ramen noodles
  • 160 grams of marinated tofu cut into pieces
  • Chilli or garlic oil
  • 2 spring onion finely sliced 


  1. Put the mushrooms, 1 tbsp each of sake, mirin, soy, garlic, ginger and halved red chilli in a large pan and top up with 2 litres of water. 
  2. Simmer for 30 minutes until the mushrooms are tender and the stock is fragrant. Add a little more mirin and soy sauce to season, if you like. 
  3. Strain the stock into a clean pan and bring to a gentle simmer again. 
  4. Slice the mushrooms and discard the chilli, ginger and garlic. Blanch the greens and bean sprouts then drain well.
  5. Cook the noodles in boiling salted water until tender, drain and add to 4 warmed soup bowls. 
  6. Add the sliced mushrooms, greens, beansprouts and marinated tofu to the stock to heat for a few minutes. 
  7. Divide the tofu and vegetable between the bowls and pour over the stock. 
  8. Add a few dots of chilli oil and scatter with spring onions and sliced chilli to serve.

2. Umami Soy Milk Steamboat Recipe

This recipe is full of flavour. It only takes 6 ingredients and 10 minutes to prepare.


  • 1 litre of unsweetened soy milk
  • 1 litre of water
  • 7.5 teaspoons of mirin
  • 7.5 teaspoons of sake
  • 1 package of ring roll (to dip)
  • Salt, to taste


Combine all ingredients into a large soup pot, bring to boil, season to taste and serve. You can dip ring rolls for steamboat for just 3 seconds and you’ll have a perfect meal. 


3. Vegetarian Meat Fajitas

  • Vegetarian meat seasoned with a little salt and garlic for extra flavour
  • Tortilla
  • Guacamole (optional)
  • Peppers and onions: season and roast them for 15 minutes
  • Vegetables you can use almost in any fajitas such as:

○ Mushroom
○ Zucchini
○ Cauliflower
○ Broccoli
○ Corn
○ Carrot 


  1. Cook vegetarian meat.
  2. When everything is cooked, assemble fajitas-tortilla, meat, peppers and onions.
  3. Add toppings to fajitas-guacamole, cilantro, a splash of lime.

4. Tofu Miso Soup


  • 1 Litre of vegetable stock 
  • 10 grams of dried shiitake mushrooms 
  • 2 tbsp of white miso paste 
  • A thumb-sized piece, shredded ginger 
  • 1 clove garlic, bashed
  • 100 grams of smoked tofu, drained and cubed
  • 2 tsp of sesame oil 
  • 100 grams of kale 
  • 170 grams of exotic mushroom mix 
  • 2 teaspoons of sesame seeds 
  • 4 nori snack sheets, shredded


  1. Gently heat the stock, dried mushrooms, miso, ginger and garlic in a pan. Simmer for 5 minutes.
  2. Heat a frying pan over medium heat. Toss the tofu and sesame oil, season and fry for 4-5 minutes until crisp.
  3. Add the kale and mushroom mix to the simmering broth and heat for 2-3 minutes until cooked.
  4. Discard the garlic, spoon into deep bowls, garnish with sesame seeds, nori, and the crispy smoked tofu.
