Vegetarian Tom Yum Soup

The Vegetarian Tom Yum Soup is a vegan version of the popular Tom Yum Thai Soup. Tom Yum Soup is famous across the world because it is not only delicious but promotes good health by boosting the immune system and help to fight off cold and flu viruses.

The original Tom Yum Thai Soup doesn’t have coconut milk added to it. But vegans can add coconut milk as a thickener. With coconut milk added, the soup becomes Tom Kha.

However, most people use Carnation evaporated milk to thicken the soup, which is also an excellent option for vegetarians. Other delicious ingredients vegetarians to add to the soup to provide more texture are ring roll and veg. 5 species ball.

Ingredients For Vegetarian Tom Yum Soup

  • 5 to 6 cups vegetable stock (or good-quality vegetarian chicken stock)
  • 1 to 2 stalks of lemongrass (minced, or 3 to 4 tablespoons of already prepared frozen lemongrass)
  • 3 whole makrut lime leaves (can be bought fresh or frozen at vegetarian product stores in Malaysia)
  • Red chillies (sliced, or 1/2 teaspoon dried crushed chilli, or 1 to 2 teaspoons chilli sauce)
  • 4 cloves garlic (minced)
  • 1 thumb-size piece galangal (or ginger, sliced into thin matchsticks)
  • 1 cup fresh, sliced mushrooms (such as shiitake)
  • Baby bok choy — 2 cups (leaves separated or chopped if large, or substitute broccoli or bell pepper)
  • 1 cup cherry tomatoes
  • Optional: 1/2 can of coconut milk (good-quality)
  • 1 teaspoon brown sugar
  • 3 to 4 tablespoons soy sauce (for gluten-free diets, use a wheat-free product)
  • 1 tablespoon freshly squeezed lime juice
  • Soft tofu — about 1 to 2 cups (sliced into cubes)
  • 1/2 cup fresh basil (roughly chopped)
  • 1/3 cup fresh coriander (cilantro) leaves (roughly chopped)
  • 1 pkt. of Ring rolls from Everbest
  • 1 packet of Veg. 5 species ball from Everbest (depending on the size of serving)

How to Cook Vegetarian Tom Yum Soup?

Follow these 7 steps process to prepare and serve the vegetarian Tom Yum Soup:

Step 1

Make sure you have all the ingredients available. Cut the lemongrass, lime leaves, chilli, garlic, and galangal or ginger into small pieces.

If it’s more convenient, blend them all together in a food processor and make a fragrant paste out of them.

Step 2

Pour the stock into your soup pot. Add prepared lemongrass, the lime leaves, chilli, garlic, and galangal or ginger.

Boil, the mixture for 5 minutes, or until broth is very fragrant.

Step 3

Add mushrooms and reduce the heat to medium and simmer for 5 to 8 minutes, or until mushrooms are soft.

Step 4

Next add the veg. 5 species ball, bok choy, and cherry tomatoes. Gently simmer 1 to 2 more minutes (bok choy should remain on the crisp side).

Step 5

Reduce heat to low and add coconut milk or Carnation evaporated milk, sugar, soy sauce, and lime juice.

Add the soft tofu and stir gently. Taste the mixture and adjust the seasoning as needed.

Step 6

To serve, ladle soup into bowls with fresh basil and coriander sprinkled over.

Step 7

Before serving, add the ring rolls in the soup.

The Vegetarian Tom Yum Soup can be a delicious appetizer or nutritionally complete meal eaten for lunch or dinner.
