Japanese Tofu Puff with Black Bean Sauce

  • 1 packet  Everbest Japanese Tofu Puff
  • 3 tbsp oil divided
  • 2 cloves  garlic minced
  • 2 tbsp dried fermented black beans rinsed
  • 2 scallions cut into large pieces, whites and greens separated
  • 3 dried red chillies optional
  • 1 tbsp Shaoxing wine
  • ½  tbsp  light soy sauce
  • ½  tsp  sesame oil
  • ¼ tsp  ground white pepper
  • ¼ tsp sugar
  • 1 tsp cornstarch dissolved in 2 tablespoons water


Step 1 – Cook the Garlic, Dried Black Beans, Scallions and Chillies

  • Get your wok ready and place it over medium heat, add 1 tablespoon of oil, garlic, dried black beans, the white parts of the scallions and chopped chillies. How much chillies you use depends on your preference, or you can use none at all.

Step 2 – Stir and Cook Everything

  • Stir and cook everything together (approximately 1 minute). Make sure not to burn the garlic. Now, it is time to add the tofu, Shaoxing wine, light soy sauce, sesame oil, white pepper, sugar and the green parts of the scallions.

Step 3 – Stir The Cornstarch Mixture

  • Unlike conventional tofu Everbest’s Japanese Tofu Puff are more resilient hence you can stir them in the sauce without worrying about breaking them. Once the mixture is bubbling, it is time to stir your cornstarch mixture. Make sure it is completely dissolved. Then add it to the wok or skillet. It is important to stir gently and quickly until the sauce has thickened and evenly coats the tofu.

Step 4 – Enjoy!

  • Finally, serve the tofu with black bean sauce right away with rice on the side! Enjoy!
