  • 155 g dried bean curd knots

Instructions
 

  • Boil a large pot of water. After it has cooked, add the knots of dried bean curd and let it simmer for 20 minutes or until tender. Remove the knots from the heat and drain. To extract excess water, press them gently with a spatula. Cover and set aside.
  • Set stove to medium heat. Then heat the oil in a large skillet. Add the ginger, red pepper flakes, sesame seeds and garlic (optional) once it is warmed. Fry for 2-3 minutes or until the sesame seeds turn golden brown.
  • Add the knots of bean curd to the skillet and sauté for 2-3 minutes while stirring to avoid sticking.
  • Allow the soy sauce, lime juice, and maple syrup, deglaze the pan, and cook for another 2 minutes. Remove from the heat and top with green onions or chopped cilantro.
  • Serve the knots of spicy bean curd on the side with sautéed greens such as Pak Choy, spinach, kale, etc.

Notes

Tip: Bean curd knots can be kept in the refrigerator for up to 3 days, and they can also be eaten cold.

These days, thanks to modern-day technology, you can try vegetarian lamb made from soy protein or textured vegetable protein (TVP).

In this blog post, you will learn how to make the vegetarian lamb curry. Most of the ingredients you will need can be found in any grocery shop in Malaysia. For plant-based meat or other vegetarian products, you can easily purchase them from Everbest Malaysia.

Ingredients
  

  • 250 gm Everbest Veg. Stewed Lamb Chunk
  • 200 gm fresh grounded chilli paste
  • 800 gm coconut milk (optional)
  • 1 tbsp curry leaves
  • 1 big onion (optional)
  • 15 gm ginger
  • 1 green chilli
  • 1 big tomato 
  • 1 tsp salt
  • 2 cups water
  • 2 tbsp vegetable oil
  • 1/2 tbsp sugar
  • 300 ml water
  • 1 Lemongrass
  • 2 Pandan leaves (optional)

Spices

  • 1 tbsp curry powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp chilli powder
  • 1 tsp biryani powder
  • 2 pods cardamom
  • 2 pinch cinnamon

Instructions
 

Preparations

  • Cut vegetarian lamb into bite-size pieces.
  • Slice the green chilli pepper into nice rings.
  • Slice the tomato into nice rings (remove the seeds).
  • Chop the curry leaves.
  • Chop the ginger finely. Alternatively, you can also make it into a paste.

Methods

  • Set the wok or pan on the stove to heat.
  • Add 2 tablespoons of vegetable oil and allow to heat.
  • Add 2 pinches of cinnamon, 2 pods of cardamom, and 1 dry chilli. Fry until the aroma is all over the place.
  • Add in the pandan leaves and lemongrass. Pandan leaves are optional however, they can add to the taste as well as enhance the aroma of the meal.
  • If you are planning to include onions in your recipe, you can add them now. Make sure they are chopped finely. Allow to fry for about 10 minutes, then add the chopped curry leaves.
  • Add the chopped tomato and allow to fry for extra 2 minutes.
  • Add finely chopped ginger and allow to fry for 2 minutes.
  • Add the Veg. stewed lamb chunk and allow to fry for 3 minutes.
  • Add 1 tablespoon of curry powder, 1 teaspoon of coriander powder, 1/2 teaspoon of turmeric powder, 1/2 teaspoon of chilli powder, and 1 teaspoon of biryani powder.
  • Add 2 cups of water and a tablespoon of salt.
  • Cover and leave to boil. Once it boils, reduce the heat and simmer for 10 minutes.
  • For a richer, creamier curry add 1/3 cup of coconut milk and cook uncovered for 3 minutes.
  • Taste for seasoning, and add as required.

Notes

Balance is the key when cooking the vegetarian curry lamb. A good curry lamb meal, cooked by the hand of an expert, has all of its elements working in sync, each finding its sweet spot in the flavour palette.

The secret to the delicious tasting Vegan Kung Pao is a plant based meat. The plant based meat is a perfect substitute for chicken in the classic Chinese meal because it soaks up the flavours perfectly. Another bonus to this delicious recipe is that it can be prepared and serve in only 30 minutes! 

The Vegetarian Ku Loh Meat is also a great option for vegans who want variety in their meals. It perfectly substitutes for chicken and pork while being rich and savoury. It is salty, sweet, and deliciously spicy. The chilli releases some of its sweet spicinesses into the oil before adding your fresh ginger and red peppers.

Ingredients
  

Ingredients for Kung Pao Sauce

  • 2 tbsp Dark Brown sugar
  • 1/2 tsp Ground Ginger
  • 1 tsp Fresh Ginger (chopped finely)
  • 1 tsp Cornflour
  • 100 ml Vegetable stock
  • 5 tbsp Light soy sauce
  • 2 tsp Dark soy sauce
  • 2 tbsp Rice vinegar
  • 2 tbsp Shaoxing wine or Mirin or dry white wine (Optional)
  • 2 tsp Hoisin sauce

Instructions
 

  • Add browns sugar, cornflour, ground ginger, rice wine (or white wine), rice vinegar, Dark & Light Soy Sauce, vegetable stock. Finally, add Hoisin Sauce. Even though most Hoisin sauces are vegan, double-check to ensure it doesn't contain fish sauce.
  • Place the sauce on one side for now and then coat the veg. Ku Loh with cornflour, bicarbonate of soda, and light soy sauce. The coating of the vegan meat helps it brown quickly on the outside and remain juicy inside. It also helps to thicken the sauce when added. Fry using sesame oil for 5 minutes until it is slightly browned. Then remove from pan.
  • Add more oil to the pan, with Chilli (pureed or sliced), fresh ginger, and peppers. Fry on high heat for one minute before adding the Kung Pao sauce. Stir continuously until it boils. Add the veg. Ku Loh back in the pan. Stir for another 3 minutes before you add cashew nuts. Lastly, stir for two minutes.
    Your Vegan Kung Pao dish is ready to serve!

Notes

The chilli gives your vegan kung pao a fantastic spicy punch to get your taste buds tingling, but if you don’t like it spicy use only one chilli (or none!).
